Keto Eggs Benedict with Mushroom Side

Looking to boost your good fat intake?

This quick and easy nutritious Low carb, high fat breakfast (although we did have it for dinner....!) is easy to make.



It is one that can be added to any ketogenic diet. (use keto sourdough instead of normal sourdough). Its got it all!


Bacon fried in organic butter, poached egg, served on sourdough, with hollandaise sauce.

Portobello Mushrooms side dish from Revive Cafe Cookbook 3

Makes 2 x 1 cups serves


Ingredients:

  • 4 flat portobello mushrooms sliced

  • 1 clove garlic finely chopped or crushed

  • 1/2 red onion sliced

  • 1 tablespoon oil (I used butter)

  • Fresh spinach

  • 1/4 teaspoon salt

  • garnish with

  • 1/4 avocado

  • parsley finely chopped


Recipe:

  1. Saute the mushrooms, garlic, onion and oil(butter) in a pan for around 10 minutes. Put lid on so they can sweat while stirring regularly

  2. Add the spinach leaves and salt and cook for around 1 minute so they wilt slightly

  3. Garnish with avocado and parsley
